Kim ( my youngest daughter) has been working with us this summer in our cookie bakery and came up with these scrumptious cream cheese cookie sandwiches. Peanut butter filling, vanilla filling and mint chocolate chip! They are the best of the summer, I think for us. I love the stack, photographed by my husband Dan.
